Bitter GreensUpdated: March 20th, 2014
Created: March 20th, 2014I notice that once a year, I think, around March 15th kale, sprouts, broccoli etc taste bitter. I'm wondering if the length of day indicates the start of some process, like how onions will grow the bulb when the night is short but in this case develop a bitter compound
As erucic acid is a product of the brassica family and
erucic acid only occurs in nature along with bitter tasting compounds

I wonder if that could be related?
