Created: July 28th, 2021Though last years maize was eaten by rats and mice I still have a small stash from previous years. I use it as an addition to spelt flour when making bread, only some 16% maybe so as not to make the bread too crumbly.
The grinding is a bit of a chore using an old cast iron small wheat grinder that is on it's last legs.
